I love tacos. Especially hard shell tacos. I can’t tell you how happy they make me. For awhile, we had tacos probably once a week – usually on Tuesday. Because of this, I streamlined my prep process a bit by buying one of the taco dinner packets. It’s not my proudest moment, because I typically like to make most things from scratch, but I got lazy. Anyway, these packs include hard shell tacos, taco seasoning, and a taco sauce. Usually, the filling always included chicken or ground turkey. However, the other day I decided to try black beans!
I started off the same way I always do, I just replaced meat with beans. See below.
Ingredients
- 1 can black beans (or 1 ½ cups)
- 1 onion
- water
- 1 taco dinner kit, or:
- Hard taco shells
- Taco seasoning
- Taco sauce
- 2 cups Kale
Instructions
- Preheat the oven to 300 degrees
- Dice your onion and add it to a pan on medium high heat with some olive oil. Once the onion has been cooked through, add your black beans and the taco seasoning and 1/3 cup water.
- While the beans are warming up, take the kale and slice it into thin ribbons.
- Line the shells on a baking sheet
- Once you think the beans have warmed up a bit, spoon the beans and onions into the shells. Put into the oven for about 5 minutes, so that the shells get nice and crispy.
- Add the kale
This was a spur of the moment meal, so I didn’t really think it through, but it would have been nice to have a corn salsa or something similar to go with it. Instead, we just had a lot of tacos!
