I had some very ripe bananas the other day, and no bread tin for banana bread, so I decided to try my hand at the super simple oatmeal, chocolate chip and banana cookies that are popular. They turned out pretty well. I ended up including some peanut butter and honey to help hold everything together. For this recipe, I used milk chocolate chips because that’s what I had, but I bet they would be even better (better for you) with dark chocolate.
Ingredients
- 2 ripe bananas
- 2 cups whole oats
- 2 tablespoons crunchy peanut butter
- 1/2 cup chocolate chips
- 1 tsp honey
Instructions
- Preheat over for 325.
- Drop tablespoon full of the cookies onto a baking sheet. They won’t spread out, so they can be about an inch apart.
- Bake for 8 minutes – or until they have a nice, toasted color on the top. I’m still figuring out this oven, so it might be closer to 10 minutes for other people.
